Huevos Rancheros Montados // A handful of breakfast ❤️

Huevos Rancheros (Rancher’s Eggs) is a beloved Mexican breakfast dish commonly found in nearly every restaurant throughout deep South Texas, and it also appears on many menus nationwide. The highlight of this recipe is that the Huevos Rancheros are served on top of a tostada smeared with refried beans, then generously topped with my delicious salsa, avocado, and queso fresco. When I'm hosting several guests and short on time, I like to prepare the salsa and refried beans in advance. This way, all I need to do is fry the tostadas and cook multiple eggs on my griddle, allowing me to serve everyone at once. These Huevos Rancheros Montados are sure to become your go-to breakfast, whether for one person or a crowd. I truly hope you give this recipe a try! ❤️

Eggs (as needed)
4 Lrg Roma tomatoes (diced)
1/2 Medium chopped onion
1/4 cup finely chopped cilantro
2 large minced garlic cloves
1/4 tsp ground cumin
Salt as needed
Pepper as needed
3 Tbsp cooking oil (for salsa)
2 Serrano peppers (slices)
Refried beans (about 3 1/2 c.)
3 Tbsp bacon grease (for beans)
1/4 - 1/2 C. Water for salsa
Corn tortillas as needed

Extras—-
Queso fresco
Avocado (mashed or slices)
