The Greek city of Thessaloniki never changed its name. It was founded as Thessaloniki (meaning "Victory over the Thessalians") and today is still called Thessaloniki in Greek. All other versions are due to other languages modifying the pronunciation and paraphrasing the name. The way you are pronouncing Thessaloniki, comes from latin (dead language), as if you were calling France, not France but Gallia.
