Matbucha 🇲🇦
Spicy Moroccan tomato dip made with cooked tomatoes, hot peppers, garlic and oil. This appetizer style salad is delicious on sandwiches or with warm bread!

Ingredients:
3-4 Tbsp olive oil
1 red bell pepper
2 jalapeño pepper
3 Serrano pepper
10 garlic cloves
10 fresh tomatoes ( medium size)
1 Tbsp Sugar
3 Tbsp Paprika
1 tsp Ground cumin
2 tsp Kosher salt
1/2 cup olive oil
Method:
1. Make a X cut in the bottom of each tomato. Place all of the tomatoes in a mixing bowl and cover with boiling water. Wait 5-10 min.
2. Peel the tomatoes and blend in a blender or food processor.
3. In a food processor or blender place red bell pepper, jalapeño pepper, Serrano pepper and garlic and blend until tiny chopped.
4. In a wide pan heat 3-4 Tbsp olive oil over a medium high heat, and fry the pepper mixture for 3-4 min.
5. Add the crushed tomatoes, spices and mix well, add 1/2 cup olive oil and stir well until fully incorporated.
6. Reduce the heat to medium/ medium low heat and cook for 1 1/2 hours or until the sauce is thickened.
7. Serve with challah bread and Enjoy 😉
