Thanks for your question, LeahRozai I. We recommend frying/cooking the quesadillas today, and then reheating them just before it's time to serve at school. Or, to ensure the tortillas don't get soggy, you could assemble them an hour before serving time and keep them warm in an oven until needed. Two options. Hope they help.

I think the single tortilla, filled on one half side and then folded is a lot easier to handle when flipping and th slices then have a folded edge that works best as the side to hold in on.

Instead of putting them together outside the pan and trying to lift the whole thing in (usually spilling or collapsing it), but one tortilla down on the pan then add the mixture you cooked to it with the cheese, then put the top tortilla on. Much easier. You can use that method with your grilled cheese too.

Its not necesary put all that ingredients, just put a tortilla and then cheese and other tortilla, asi se hace en mexico.
