En el caso de "Me encanta", de por sí ya significa que algo te agrada o te gusta demasiado. Por eso decir "me encanta mucho" es redundante.

Acá en Estados Unidos, los que no hablan español piensan que agregarle la letra “O” a cualquier palabra en inglés les hace creer que están hablando español. Y luego se ofenden por que no les entendemos.
