As a korean, should have saved the kimchi and grilled it, goes really well with things like galbi(갈비)(and I know this isn't what this is, it's smoked, but I'm saying generally cooking kimchi, garlic, and onions with the meat is common in korea especially in restraunts with grills in the table where they bring the meat uncooked with sidedishes

It is weird bc kimchi itself is a fermented food, and you're fermenting food with fermented food. Maybe ferment meat with the same method as kimchi we will make it better
