I had this today for breakfast - Myyy god it was delicious. Some things I learned:

1. If youre from a country were "normal" pancakes are more like a slightly thicker crepes (think french crepes) then you can know that this is way more food, it actually fills you up nicely, which I suppose is thanks to the yoghurt and oil in the batter.

2. You might want to try doing a test batch with two ones first, where you intentionally overcook one a little bit, and undercook the other. This is because some people will hate it if its a little bit soggy (if it would get to that by accident) and some will hate it if it gets too dry. Myself I'd rather have them slightly undercooked otherwise it will be like dishrags. Why I'm saying this is because if you do a large batch considering that they will be a bit uneven and how good your stove / frying pan is for heat spreading...

All in all superb maple sy-, I mean pancakes! ;)

I made them this morning! Seriously good! Moist and fluffy :) I added a little bit of ricotta and cinnamon.

Looks really good. I have made very thick buttermilk pancakes and put a large dollop of greek yogurt with a generous serving of maple syrup. I never thought of putting the yogurt inside. I found that I really like the zing you get with yogurt.

This is a solid recipe. I've been making pancakes like these for years but I was using cottage cheese instead and was making the batter in a blender super fast.

Yogurt is even better since you can mix by hand. Needs a little more fat and sweetness to balance the flavor though.
