Red cabbage is a treat to the eye as well as the palate. Bring this one to the barbecue and you’re guaranteed to steal the show. One of the tastiest Coleslaw recipes out there.
The combination of yoghurt and mayonnaise creates a wonderfully subtle flavour that brings out the sharpness of the red cabbage and onion together to make the best coleslaw.
RED CABBAGE APPLE COLESLAW RECIPE
Prep Time: 5 mins
Side (serves five)
WHAT YOU NEED
1/2 small red cabbage (400g)
4 tbps Hellmann's Real Mayonnaise
2 apples (200g)
1/2 small red onion (35g)
Parsley
2 tablespoons low-fat natural yogurt
1 lemon
Pepper
WHAT YOU DO
Chop and toss the apples in the lemon juice, then in a large-sized bowl mix together the cabbage, apples, onion and parsley.
After the mixing, add the mayonnaise, yogurt and then season with pepper.
Bring it to your friend’s barbecue and watch them turn green (or red) with envy.
