On special occasions, I go one step further. While the steak is resting, try throwing a few minced shallots in the pan you just took the steak out of and sautee for a couple of minutes. Drain off some of the excess fat, throw in a shot of cognac (or whiskey, but I like cognac personally), flambé if you want to feel fancy, then add splash of heavy cream and reduce. Season to taste. 🤤

Try separating those two pieces and cutting them perpendicularly to their grain. The top smaller part’s sooo good
