Have you ever heard of this Hard Boiled Egg enchilada recipe? I’ve seen them called Enchiladas Ranchos. These were passed down through our family from my 4th Great Grandmother Martina Castro of Rancho Soquel, California.
Sliced Black Olive, Chopped White Onion, Sliced HARD BOILED EGG, grated cheese, and red sauce.
Were these a Spanish or very early Post Spain/Mexican recipe? Cheers! Mike

My mom made her enchiladas like lasagne in a baking pan. Each corn tortilla was fried in oil, dipped in sauce, and layered in the pan with meat and cheese, and more sauce, and baked.
Flour tortillas with a dribble of sauce are not like my mom used to make.
