I can’t seem to find any videos that will give me more details on this subject beyond these kinds of short introductory lessons that use plain layman’s terms suitable for beginners and grade school children.

Ah yes, they should be teaching this in elementary school. If a child cannot distinguish a Calabi-Yau manifold without using Riemannian metrics, then our future as a species is doomed.
