you will need...

the pattern batter
20g soft butter (20mls / 4 teaspoons)
20g sugar (25mls / 5 teaspoons)
20g plain flour (40mls / 2½ tablespoons)
5g cocoa powder (10mls / 2 teaspoons)
1 egg white
black gel food colouring

the sponge
75g sugar (90mls / ⅓ cup)
75g self raising flour (145mls / ⅔ cup)
3 eggs
1 teaspoon vanilla extract (5mls)

assemble:
235g double cream (250mls / 1 cup)
15g sugar (20mls / 4 teaspoon)
1 teaspoon vanilla extract (5mls)
100g strawberry jam (75ml / ⅓ cup)
sugar for dusting
