Ingredients:
• 2 medium potatoes
• Olive oil
• Salt
Preparation:
1️⃣ Slice the potatoes paper-thin using a mandoline or a knife. Thin slices are crucial; otherwise, they’ll stay soft inside.
2️⃣ Soak them in cold soda water with salt for 30 minutes. (If the water isn’t cold enough, add ice.)
3️⃣ Rinse, dry well, and arrange on a baking tray lined with parchment paper.
4️⃣ Drizzle with olive oil and salt, then bake at 200°C (392°F) until crispy—keep an eye on them!
For the Salad Base:
• ⅓ Turkish coffee cup of olive oil
• 1 heaping tsp pepper paste & 1 heaping tsp tomato paste
• 1 tsp salt + 1 tsp black pepper + 1 tsp chili flakes + ½ tsp cumin
• 1 medium red onion, thinly sliced
• 1 large red bell pepper, finely chopped
• 5 small pickles, diced
• ¼ bunch parsley, finely chopped
• 3 scallions, finely chopped
🔸 Tip: Chop everything as finely as possible so the flavors don’t overpower the crispy potatoes.

2️⃣ Add the pickles, parsley, and scallions.
