Mixing Panettone Timelapse
Mixing panettone is a patience party.
🕒 Timer: 40 minutes total to mix the 2nd dough
✨ Patience is key. Allow time between each addition of ingredients to create a strong final dough that rises beautifully in the moulds with no mushrooming. Mixing at 125rpm with occasional bursts on high speed works well, but it may vary from recipe to recipe and baker to baker.
❄️ Chilling the ingredients beforehand prevents overheating the dough, allowing for a longer mixing time.
