My mom would add a whole ton of garlic with the onions and ginger. She also uses firm but almost ripe papaya. It adds the sweetness to the dish. Yumm!!!

I am so happy that you’re using spinach because every other recipe I found used Malunggay and I cannot find anywhere that sells it near me.

Chayote is optional because... The traditional, original recipe requires green papaya and chilli leaves. Dont forget the lemon grass, too.

Chayote is used in MEXICAN DISHES A LOT. So you can find it in any store actually. not only Mexican store.

I know it's better with it, but can the onions be optional?

my moms style is first cook the chicken then make the soup or broth add sinigang ginger and idk what type of leaves she puts in it but extremely delicious we dont add onion though only sometimes her version of tinola is so good salty also sour even the soup is wonderful when theres no chicken left i pair the soup with rice and its perfect
edit:idk the other ingredients

Any point to sear the skin of the chicken if it’s going to be braised anyways

Chicken Tinola is an old dish. It has been around since Spanish Regime in our country, 400+ years ago.
