Speaking of people eating apple seeds/cores, my late grandmother always AMAZED me with her ability to whittle every last sliver of apple flesh off the core. When she pronounced it finished, all I can imagine that was actually holding it together was simple memory. I've seen dried cores with more flesh on them still than my grandmother left. I've never been able to duplicate her tenacity or skill in that department, but I'm willing to let it go. I will say bravo to Cosmo for his lemon loving ways.

This looks loooovely! My favourite flavours to put with apple are lemon and vanilla (rather than cinnamon which is in basically 99% of apple recipes) so this is a dream. I might add a little lemon zest into the batter in fact to amp it up even more :)

I had a spiral apple corer peeler that resulted in 1/8" slices. My newer one makes thicker (1/4") slices. You might want to try one for this recipe. Go to try your crust recipe for my Adi Apple Pies.

In high school my parents had to hide the lemons as the enamel on my teeth was breaking down. I can eat an entire lemon with salt.
