Just a short sharpening session on the naniwa pro 1000, and the Kitayama 8000.
Im still testing the Jende strops, and trying to get the feel for them. This time using aogami #2 steel

Naniwa pro 1000 - 03:20
cut test after 1k - 08:20
Kitayama 8000 - 08:40
cut test and stropping -12:23

Great videos man! Been thinking of buying the kitayama 8k for a couple of years now. but seeing as i mostly use my knives for meat and veggies, I can't decide if I really have any use for it. Any thoughts? I usually finish my carbon steel knives on a naniwa pro 3k. How is the edge retention of an 8k polish?
