A simple recipe to make delicious pancakes with homemade cheese!INGREDIENTS
 4 cups milk;
 2 lemons;
 2 eggs;
 2 tbsp sugar;
 ½ cup flour.
 
METHOD

 Boil milk in a large pot. Meanwhile, roll both lemons before squeezing them out to extract as much juice as possible.
 Pour lemon juice into hot milk and stir. Set aside for 5 minutes then strain right into a colander covered with cheesecloth or clean towel.
 Squeeze as much whey as possible. You should end up with around 270-300 g (9-10 oz) of fresh cottage cheese. Combine cottage cheese with sugar, eggs and flour until smooth paste forms.
 Sprinkle a cutting board with flour generously, then place cottage cheese mixture and add some more flour on top.
 Roll cheese mixture into a log and cut into 5-6 pieces. Form each piece in a round patty and fry over medium heat with some butter for around 5-6 minutes (until golden on both sides).
 Serve right away with some sour cream and your favorite jam.
