HEALTHY CARROT CAKE RECIPE

This healthy recipe with greek yogurt, naturally sweetened with maple syrup and use freshly grated carrots
I did a lot of experiments on making the perfect moist carrot cake, and last night I think I found the perfect recipe.

Ingredients needed:

For the carrot cake:
✔️1 1/2 AP flour
✔️2 TSP baking soda
✔️1/2 TSP Baking powder
✔️2 TSP Ground Cinnamon
✔️1/8 TSP Kosher Salt
✔️1/5 cup melted butter/oil
✔️2 eggs
✔️1 tsp vanilla extract
✔️2/3 cup maple syrup
✔️1/2 cup Greek yogurt
✔️1/3 cup oat milk (you can use almond milk, or regular milk)
✔️2 cups of grated carrots

For the frosting:
✔️3/4 cup cream cheese
✔️1/4 cup Greek yogurt
✔️3 TBSP honey/maple syrup
✔️1/2 TSP vanilla extract
.
Instructions:
1️⃣ Mix dry ingredients, and then wet ingredients. Add the dry ingredients to the wet ingredients, then add the grated carrots, mix well.
2️⃣ Bake in the oven for 35 mins at 350 F (or longer until toothpick is clean)
3️⃣ To make the frosting: beat the cream cheese until smooth, add the rest of the ingredients, beat until the mixture become light and fluffy
4️⃣ Make sure the cake is fully cooled down before spread the frosting, then add more cinnamon powder, you can add more topping like walnut pieces
