Great angles and looks like a fun approach! When doing this approach, are your eyes mostly looking out at the runway, or only the PFD?

I have a question. I am starting to fly the PMDG 777 for Flight Simulator 2020 and my question is, if I deactivate the automatic speed, should I manually control the speed so that the plane does not drop below the VREF speed? I want to know if this is a real process, since when I deactivate the automatic speed, the plane starts to lose speed and drops below the VREF speed, entering a stall. So I want to know if it is correct to take manual control of the speed when deactivating the automatic speed to prevent the plane from dropping below the VREF speed and to increase it if necessary. Obviously, I am also referring to the 737 and 787.
