Absolutely brilliant video and learnt so much about controlling temperatures in a way that was easy to understand. Keep up the good work. Unfortunately I don’t have a Webber Smoker but a Kingsford bullet and thoroughly enjoy smoking on it.

I watched this when i knew nothing about BBQ -- my WSM isn't even out of the box. After 20 mins of this video, I feel confident and ready to cook.

I just wanted to thank you T-Roy. I’m not much of an outdoor cook. I use my weber charcoal grill on occasion, but nothing I cook is anything special.

Anyway, after watching your video several times here I finally got the nerve to use the weber smoky grill (14”) I acquired a couple months ago.

I wasn’t brave enough to try the brisket, so I stuck with two big chickens. I figure if I messed those up, I could just finish them off in the oven or something.

Well, they came out great. Absolutely succulent and delicious. I wish I could post a picture to show you.

I’m going to smoke again next weekend. Probably stick with chickens again as i still get familiar with things, but I feel at least a little proud of what I did… Thanks to you.

watching these videos at 5am as i smoke a 16lb prime brisket. the wsm is truly a workhorse and a model of consistently. 215-225 for the last 6 hrs without a hick up on a cool California spring night. thanks T-Roy!

Dude, that trick with flipping the chimney upside down to light 15-20 pieces of charcoal is genius. Its always a struggle to get a small amount of charcoal to take off in the chimney. Probably the single most helpful thing I've found on the internet. Thanks T-Roy!! Smoke on brother!

My wife surprised me with a WSM as my Christmas present. It is built and currently staring longingly at me in my study. Due to British winters being rubbish I am having to live vicariously through videos such as yours until the weather improves enough to get out there and start smokin'! Long time fan T-roy, I enjoy smoking every chance I get but had converted years ago to gas just because of the whole busy life need to save time thing. I enjoy watching and trying to use your advice when grilling in general, just had to modify to my gas setup. Now it's 2020 and I find I have a bit more time available so I picked up a WSM 22" and watched this video! My first cook, smoked about a dozen chicken breast on the lower level. Following your advice made the effort so simple. Easy light up, minion method worked so well. Temp held steady and it was windy. Incredible video, absolute must watch for anyone using a WSM for the first time or if you are having trouble dialing it in. Thank you T-roy

Just got ours today and looking for tutorials on how to use it. This is the 5th video I watched and it was by far the best, most informative video. We are a Weber grill/Kingsford family so I was very happy that you used what the WSM was built to use. Thank you again! We're going to fire it up tomorrow and my uncertainty has turned into ambition!

Love the vids and it works great for me. Like you say it's all about how your smoker works best. I have a basic smoker with 1 bottom vent. I use this method with the bottom vent started about 1/4" open then shut it completely for 225 degrees. It's all trial and error but your videos are all I've ever watched and everyone I cook for loves the end result. Thanks for the thorough information...you're an inspiration for all first timers out there!
