Ingredients:
• 4 lb pork belly
• Yellow mustard
• Heath Riles BBQ Hot BBQ Rub
• Heath Riles BBQ Competition BBQ Rub
• ½ stick of butter
• Heath Riles BBQ Cherry Apple Habanero Glaze
• Heath Riles BBQ Competition BBQ Sauce
Directions:
1. Cut pork belly into cubes and coat with mustard or avocado oil as a binder.
2. Season with a layer of hot BBQ rub followed by competition BBQ rub.
3. Preheat smoker to 300°F using Royal Oak Charcoal Pellets.
4. Place the pork belly cubes on a greased wire rack and smoke for 1.5 hours.
5. After 1.5 hours, transfer cubes to a pan, drizzle with competition BBQ sauce and cherry apple habanero glaze, add a few pats of butter, and mix.
6. Cover the pan with foil and return to the smoker for another 1-1.5 hours until tender.
7. Remove from smoker and serve.
