Taiwanese Dry noodle with minced pork

Ingredients
- Fresh flour noodles
- 1 lbs ground pork
- 3 shallots(minced)
- 5 cloves garlic(minced)
- 6 shiitake mushrooms(sliced)
- 2 tbsp neutral oil
- 1/4 cup shaoxing wine
- 2 tbsp dark soy sauce
- 1 tbsp light soy sauce
- 1 tbsp oyster sauce
- 1/2 tsp Chinese five spice
- 1/2 tsp white pepper
- Msg to taste
- 1.5 tbsp rock sugar(you can use brown or white sugar)
- 1/2 cup water or stock
- Bean sprouts(garnish)
- Scallions(garnish)
- Cilantro(garnish)

Instructions
1. On medium heat, sauté shallots and garlic until fragrant.
2. Add ground pork and once the mince starts to change color, add the sliced shiitake mushrooms.
3. Add shoaxing wine and let the alcohol cook off for a few minutes.
4. Add dark soy sauce, light soy sauce, oyster sauce, Chinese five spice, white pepper, msg, and rock sugar.
5. Pour water/stock and let simmer for 45 minutes.
6. In a pot of boiling water, blanch bean sprouts for 30 seconds.
7. Boil fresh noodles according to the instructions.
8. Prepare your bowl of noodles and garnish with the blanched bean sprouts, cilantro, and scallions.
