We love you Phil! Agitation and low temperature are two things which help increase the absorption of co2 by the liquid. I understand old fashioned sodas would use a yeast reaction to carbonate - if yeast soda gets flat you can just seal the bottle and leave it warm to recarbonate.

Making yeast soda has a lot of max-it-out potential. A tablespoon of yeast, a cup of sugar, and a pot of hot coffee all sealed in a 2L bottle for about an hour will produce an incredible reaction and a fountain upon opening the bottle. (Edit in case anyone tries this - please be careful as this creates a high pressure system and could explode if left alone and forgotten. Maybe not the best max it out idea on second thought 😂)

My husband literally bought one of those machines today. I am NOT sharing this video with him lol! 🤣 (I have not recovered from when he and my son kept making "experimental breakfast".)
