Pistachio White Chocolate Banana Bread Recipe:

2x bananas
80g yogurt
1x Egg
20g Butter
75m-100ml milk + squeeze of lemon (optional but thus creates a “buttermilk”- I use rokeby lactose free fit milk (light)
1 tsp vanilla
60g Granulated Sweetener- I use natvia brown sugar
160g all purpose flour
40g Protein Powder- I use @macromike vanilla buttercream (dc amb-eliyaeats)
1/2 tsp baking powder
1/4 tsp baking soda
2 tsp cinnamon
1/2 tsp nutmeg
30g chopped pistachios (reserve some for top)
40g sugar free white chocolate- I use @noshu choc chips (or normal white choc)
70-80g Pistachio spread (reserve some for drizzling)- any pistachio spread will do, I use my own homemade healthier pistachio spread, recipe is in the link in my bio

1. Pre-heat oven to 180c or 350F
2. Melt butter and add sweetener and vanilla and whisk. Add mashed banana, egg, yogurt and milk and mix until all the wet ingredients are well combined.
3. Sift through Dry ingredients and add the chopped pistachios and white chocolate chips and mix with a spatula or spoon until well combined
4. Add 1/2 the banana bread batter to a lined pan, then add 1/3 of the pistachio spread and swirl, repeat and top with the rest of the chopped pistachios.
5. Bake for 45-50 minutes.
6. Let cool down completely and drizzle the rest of the pistachio spread, then cut into 10-12 slices & enjoy <3
