There were a couple of studies recently where they managed to produce foie gras without force feeding. In the lead up to 20 weeks age goslings were feed restricted, then from 20 weeks they were offered all they could eat, and daylight hours were limited. This caused the geese to naturally gorge themselves in preparation for migration. By week 30, livers weighed ~500g, but apparently weren't quite as good quality compared to force fed livers of the same weight class. This natural method probably requires much more feed than force fed foie gras because the fattening period is so much longer.
