This is my Easy Goat Curry Recipe. I am sharing my tips and tricks to remove that gamey flavour and cook a delicious goat curry.

INGREDIENTS:
1 Kilo of Goat meat (~2 pounds) Can be replaced with Lamb meat.
For whole spices I am using:
5 tsp Coriander seeds
2 tsp cumin seeds
1 tsp black pepper
4 dried whole red chilies (2 hot + 2 Kashmiri chilies)
5 green cardamom
5 cloves
1 inch cinnamon stick
1 mace flower (optional)
We will Toast these whole spices slightly and grind them into powder.
To make this recipe easier you can replace these whole spices with:
1 tbsp coriander powder
1 tsp cumin powder,
1 tbsp Kashmiri red chili powder,
1 tsp garam masala
1 tsp pepper powder
For the margination we need:
Our freshly ground spices
2 tbsp ginger garlic paste
½ tsp turmeric powder
Half of grated or chopped onion (optionally you can replace with raw papaya)
½ cup plain yoghurt
Salt to taste (1 tsp)
1 tsp oil
Ingredients for the curry:
2 -3 medium to large onions sliced thinly
2 bay leaves.
2 tsp Kashmiri red chilli powder
½ tsp turmeric
1 tsp sugar to balance the flavor
Salt to taste (1 1/2 tsp)
Pinch of nutmeg to grate (optional)
Optionally we can add potatoes and vegetables like carrots, spinach, other greens.
