Chicken Rice Soup For Two
Ingredients
1 tablespoon oil
1/2 onion diced
3 large carrots diced
2 stalk celery diced
½ teaspoon Italian seasoning
3 cups chicken broth
1 can chicken breast
1 or 2 tomatoes diced
1/2 cup white instant rice
Salt and pepper to taste
Instructions
1. In a large soup pot, heat oil over medium-high heat. Add onion, carrots and celery and cook and stir for 3-4 minutes, until onion begins to turn golden.
2. Add broth, chicken, tomatoes, italian seasoning, salt and pepper
3. Bring to a boil and cook for 20 to 30 minutes until vegetables are tender
4. Add rice and let sit for five minute before serving.
