Ingredients:
- 6 large eggs
- 1 1/2 cups whole milk
- 1/4 cup granulated sugar
- 1/2 teaspoon ground cinnamon
- 2 teaspoons vanilla extract
- About 20 small croissants, cut into cubes (reserve 5-6 croissants for the top of the French toast)
- 1 pint of blueberries
- 1 pint of raspberries
- 1 cup strawberries, hulled and sliced in half
- 2 tablespoons heavy cream
- 2 tablespoons turbinado sugar
- Maple syrup, for serving
Instructions:
1. Grease a 9×13 inch-baking dish with butter or non-stick cooking spray; set aside.
2. In a large bowl, whisk together eggs, milk, sugar, cinnamon, and vanilla. Add croissant cubes, blueberries and raspberries to the bowl and toss until fully coated. Pour the mixture into a baking dish. Top with remaining whole croissants and strawberries (you might need to cut a few croissants in half so that they fit on top). Cover and refrigerate for about 30 minutes or up to overnight.
3. Preheat the oven to 375°F. Brush heavy cream over the tops of the croissants and sprinkle with turbinado sugar so they get extra crispy. Bake for about 45 minutes or so, depending on your oven (cover dish loosely with foil if the tops of the croissants are getting too dark).
4. Serve immediately with maple syrup and additional fresh berries if desired. This recipe serves 4-6.
