Hey, Melanie! I smile whenever I realize that it's you! We made grilled cheese together some time ago. One of the things my mother used to do was soak the cut eggplant for 10--15 minutes in salt water, 2 Tbsp to 3 quarts of water. This gets rid of the bitterness that some eggplants have. Rinse and dry the eggplant thoroughly then continue with your fabulousness.
