Sharpening the blade in segments is fine when you’re just starting like this, but you run the risk of different parts of the blade being different sharpnesses, or even angles. When you get more comfortable with the stone try to transition into longer strokes with the whole blade. Also you can totally go back and forth, you don’t particularly need to only pull it one direction, that also is just to help keep steady on the same angle. Once you’re done with the stone, you’re gonna wanna hone/strop it and then you’ll really be in business

A knife collectionist here.
Your technique is good, but I'd like recommend a few tips:
1)The sharp stone should be wet (keep under water between 10 minutes or see the bubbles disappear). Always use a towel down to the stone to don't move when sharp.
2) The angle: you can use anything for verify it (coins, your fingers, whatever). Go slowly and relaxed.
3) The moves. The moves in the video is good and consistently, but personally I made it in "go-back" direcion, explaine: ALWAYS the pressure in the knife not be heavy, just should be firmly; it's for directing the knife and not push into stone. When you go the knife out of you, push a bit for the stone makes the job. And the back move of the knife, don't push it, that move is for feedback the "move out" knife.
Go firmly and back softly.

The sharpening only on the backstroke is optional you can sharpen it against the edge as well and you don’t have to worry about a burr
