ROFCO B5 Oven Steam Injection Test | What's the Best Way?

It has been 4 months since I bought the ROFCO B5 oven.

The combination of the previously used Wizwell 42L oven and the lodge combo cooker was also good.
There were limitations in the lodge pan size, Wiswell temperature, and capacity.
I wanted a home oven specialized for hearth bread, and after much effort, I got the ROFCO B5 oven.

After 4 months of use, the results are satisfactory.

However, there are some areas that need to be improved. The part that needs to be supplemented is the steam function.
At first, the bread was baked without steam.

Rofco ovens have very good insulation and sealing properties.
The steam from the bread dough itself is trapped in the oven.
Even without steam, the coupe pops well and the volume comes out well.

However, as soon as the dough is put into the oven, the steam of the dough itself does not come out.
The appearance of the hearth bread was not good by my standards.

So I'm looking for the best way to inject steam.

■ This video is the steam injection test process.
1. Set the oven temperature to 250℃.
2. Pour water into the boiler of the Bialetti Moka Pot.
3. Before the oven temperature reaches 250℃,
Place the Bialetti Mokapot Boiler in the oven.
After 30 minutes, the water boils and steam begins to come out.
4. Put the dough into the oven.
5. Open the steam vents of the oven and spray water into the oven.
6. Set the oven temperature to 200℃
7. 35 minutes to 37 minutes baking

■ Results
The appearance of the bread came out well, and the coupe was well popped. ate deliciously.
However, the process of adding steam is insecure. An easy and reliable steam injection method is needed.

가장 as 많은 부분 중 하나가 분무기를 사용할경우에 온도차이 때문에 전구가 깨지는 거라고 합니다 그래서 공식악세사리처럼 다른 쇠 등을 예열할때 같이 넣어두고 빵을 넣은 후 그 달궈진 쇠에 물을 부어서 스팀을 만들라고 안내해주셨어요~ 혹시나 해서 적었습니다!

저는 롯지 미니서버 두 개를 예열하고 반죽을 넣을 때 각각 얼음과 뜨거운 물을 넣어 스팀을 넣고 있어요. 가정용 오븐에서 베이킹 스톤으로 굽고있는데 잘 나오는 것 같아요. 항상 멋진 빵 잘 보고있습니다~ 오븐도 넘 부러워요!!

Rofco do something called a 'steam pod'. I believe it would fit the B5.

데크오븐은 아니고 컨벡션오븐을 사용하는 방법이긴 하지만 중간 칸에 베이킹스톤을, 그 아래 칸에 롯지 콤비쿠커의 스킬렛을 트레이에 올려 함께 예열합니다. 반죽을 밀어넣은 직후에 뜨거운 물 반 컵 정도를 커피드립포트로 스킬렛에 붓고 문을 닫아요. 가장 효과가 확실한 방법 같습니다.

hello. I just received my Rofco B40 oven and tomorrow I’ll be baking my first bread in it. I don’t know this oven yet and I definitely need to learn how to use it so I don’t want to bake a large batch of 9 loaves right away. I want to bake only two loaves. My question is: will the baking result be the same if I only put two loaves in such a large oven? I don’t want to bake 9 loaves in case they don’t turn out well.

다른 분들이 비슷하게 많이 써주셨는데, 저도 더치오븐에 직접 물 뿌리는것 외에도, 아주 작은 도자기 컵에 얼음을 넣어서 돌리니까 오븐 스프링이 더 잘나오더라구요!ㅎ 오븐 안에 공간 넓은것 같으니 한번 도전해보세요ㅎㅎ

Hi, great test. I’m also interested in b5 for home baking. How long did you wait for the order delivered from Belgium? For steam injection, I came across some home baker are using pressure water sprayer which I believe is more safe and effective.

스팀 주입구가 있는데 뭔 걱정입니까?ㅋ
전 압력밥솥에 딸랑거리는 추빼고 실리콘 호수 연결해서 물 끓여 쓰다가 최근에는 커피머신 스팀기능에 실리콘호수 연결해서 스팀줍니다 ㅎㅎ 실리콘 호수 끝부분에 스텐파이프 잘라 연결하면 편합니다.^^

식빵틀 같은 틀에 자갈을 넣고 예열을 한 다음 얼을을 던져 주는 방법을 사용했는데 괜찮았습니다.

저는 데크오븐이라 스팀넣을 방법이 없어 그냥 굽고 있는데 역시나 빵의 볼륨이 형편 없습니다ㅠ
하드계열 빵의 기공을 잘 만들고 불륨을 높이는 중요한 요소중 하나가 내부에 스팀을 넣는 과정인가요 ?
