Sindhi Beeh Chaat
Recipe in English:

Ingredients:
-Beeh (Lotus root) ½ kg
-Pani (Water) as required
-Aloo (Potatoes) boiled 2-3 medium
-Pani (Water) ½ Cup or as required
-Pani (Water) 3-4 Cups
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Zarda ka rang (Yellow food color) ¼ tsp
-Tatri (Citric acid) 1 tsp
-Pyaz (Onion) chopped
-Hari mirch (Green chili)
-Hara dhania (Fresh coriander) chopped
-Amchor powder (Dried mango powder) to sprinkle

Direction:
-Peel and wash lotus roots properly.
-In pot,heat water,add lotus roots and boil until its tender (approx. 1 & ½ hours) then strain & set aside.
-In grinder,add boiled potatoes and water,grind well & set aside.
-In pot,add water,potato mixture and mix well,bring it to boil.
-Add salt,red chili powder,yellow food color and citric acid,mix well and cook for 3-4 minutes.
-Add boiled lotus roots,mix and cook until sauce thickens and continue until reduced to half quantity.
-Add onion,green chili and fresh coriander.
-Sprinkle dried mango powder,green chili,fresh coriander,lemon juice & serve.

Recipe in Urdu:

Ajza:
-Beeh (Lotus root) ½ kg
-Pani (Water) as required
-Aloo (Potatoes) boiled 2-3 medium
-Pani (Water) ½ Cup or as required
-Pani (Water) 1 litre
-Namak (Salt) 1 tsp or to taste
-Lal mirch powder (Red chili powder) ½ tsp or to taste
-Zarda ka rang (Yellow food color) ¼ tsp
-Tatri (Citric acid) 1 tsp
-Pyaz (Onion) chopped
-Hari mirch (Green chili)
-Hara dhania (Fresh coriander) chopped
-Amchor powder (Dried mango powder) to sprinkle

Directions:
-Beeh ko cheel ker ache tarhan dho lein.
-Pot mein pani garam karein aur beeh dal ker gul janay tak boil ker lein (approx. 1 & ½ hours) phir strain ker ka side per rakh dein.
-Grinder mein boiled aloo aur pani dal ker ache tarhan grind ker lein & side per rakh dein.
-Pot mein pani aur aloo ka mixture dal ker ache tarhan mix karein aur ubal anay dein.
-Namak,lal mirch powder,zarda ka rang aur tatri dal ker ache tarhan mix karein aur 3-4 minutes kliya paka lein.
-Boiled beeh dal ker mix karein aur sauce garha hunay aur adhe quantity reh janay tak paka lein.
-Pyaz,hari mirch aur hara dhania dal ker mix karein.
-Amchor powder,hari mirch,hara dhania aur lemon juice dal ker serve karein

واہ زبردست دل خوش کر دیا آپ نے کبھی سوچا نہیں تھا اس چینل پر یہ ریسپی ملے گی اور بہت اچھا ہو جاتے گا اگر آپ کھانے کی تاریخ کے بارے میں بتا دے یہ ڈش سندھی ہے کیونکہ میں نے اندروں سندہ بھیھ دیکھی ہے ایک دفعہ اس طرح پکائی اس کو دھو کاٹ کر پیاز ٹماٹر میں ڈال دیا اور یہ کھائی نہیں گی وجہ ہمیں معلوم ہی نہیں تھا اس کو ابالا جاتا ہے ویل انشاءاللہ اس کو ویک اینڈ پر پکا کر دیکھو گا ویسے بھی یہ کراچی کے ہفتہ وار باذاروں میں عا م نظر آتی ہے

Nice recipe but if you add one spoon of chili powder while boiling lotus then it can not get black.

Can i use turmeric instead of food colour?

I made slightly different boil the beh without cutting side so it will remain in its original colour, i add a little amount of flour chilli flakes and half grinded sookha dhania
