Masala Fish Croquettes Recipe
Ingredients:
2 cups cooked cod (about 1 lb), flaked
3 small red potatoes, boiled and mashed
1/2 cup green peas, cooked
1/2 cup onion, finely chopped
3 cloves garlic, minced
2 tbsp chopped cilantro
1 green chilies, finely chopped (adjust to taste)
2 tbsp Shan Fried Fish Mix
1/2 tsp salt (adjust if needed)
1 cup breadcrumbs (plus 1 tsp Shan Fried Fish Mix for coating)
2 large eggs, beaten
1 cup flour
Oil for frying
Instructions:
Precook the Cod:
Bring a pot of salted water to a gentle simmer. Add cod fillets and cook for 6-8 minutes, until the fish is opaque and flakes easily. Remove and let cool. Flake the cod with a fork, removing any bones.
Prepare the Filling:
In a large bowl, mix the flaked cod, mashed potatoes, green peas, onion, garlic, cilantro and green chilies.
Add Shan Fried Fish Mix, salt, and black pepper. Mix everything until well combined. Adjust seasoning if needed.
Shape the Croquettes:
Take a small handful of the mixture and shape it into a cylinder or ball (about 2 inches in size). Repeat with the remaining mixture.
Coat the Croquettes:
In a shallow dish, combine breadcrumbs with 1 tsp Shan Fried Fish Mix.
Dip each croquette into the flour, then beaten eggs, next to roll in the seasoned breadcrumbs, ensuring an even coating.
Fry the Croquettes:
Heat oil in a deep pan to 350°F (175°C). Fry the croquettes in batches, turning occasionally, until golden brown and crispy (about 3-4 minutes per batch).
Remove and place on a paper towel-lined plate to drain excess oil.
Serve:
Serve the croquettes hot with a side of cilantro dip or your favorite chutney.
