Katakuri was fighting with Germa so they wouldn't escape from Whole Cake, that's why he wasn't there, since they were different islands, as seen in the ministories.

I mean its obvious that Oda loves Katakuri he's the only antagonists that Luffy didn't put him 6 feet under, it was the opposite he did that to Luffy so yeah a lot would change if katakuri was there and we might see Katakuri's full power when he return to save his sister soon.
