CROCKPOT SHORT RIB RAGU

As the weather gets colder, we rely more and more on our @crockpot. This recipe is just so easy, the flavors sit there forever and become incredible. Plus you set it and forget it until you’re ready for dinner time. This crockpot short rib ragu has OUTRAGEOUS flavor and you won’t be disappointed. You can serve it over whatever you want, pasta, rice, but we opted for a parmesan mashed potato (another healthy eats recipe coming shortly). This is super filling, super healthy, and we did have some leftover that we froze for next week. Tag me if you try it!

Ingredients:
3 lbs short ribs seasoned well
Beef tallow
3 carrots
1 white onion
2 celery stalks
14.5 oz can crushed tomatoes
8 cloves minced garlic
2 tsp Italian seasoning
2 bay leaves
1 tsp balsamic vinegar
1/3 cup dry red wine
1 cup @kettleandfire bone broth
6 oz tomato paste
Parsley for garnish
Instructions:
Pat your short ribs dry and remove excess unwanted fat. Season well on all sides with salt and pepper and sear each side on medium high heat in some beef tallow. Once all sides are brown, remove from the pan and place in the crockpot. Add your all your chopped veggies, seasonings, and liquids. Cover everything with your crushed tomatoes. Everything goes in but the tomato paste. Cook on low for 8 hours. After 8 hours, remove and shred your short ribs discarding the bones and any additional unwanted fat. Put back in the crockpot, add your tomato paste and stir well to combine. Serve over parmesan mash, top with parsley and enjoy!
