Pro tip: before adding the butter, blend the egg yolks and lemon juice on high until it turns to a lighter shade of yellow. That ensures the eggs are cooked when you add the butter and increases your chances of success.

It’s better with an immersion blender, not all regular blender works the same, some blades are mounted higher.

Yea I tried it Jonathan it came out horrible and my Vitamix blender barely picked up the egg yolks to mix them like the blades were too high or something I don’t know!! It sucks!! I love hollandaise sauce but hate doing it over the stove Idk I’ll try it again another day!! Thanks for your tips love your videos!!!

I tried this today. Ended up with a watery mixture that never thickened. We definitely added the butter slowly enough. The butter was around 160° when we added it. That’s the only thing I can think that might have been wrong. Should the butter have been hotter?

...and where is the Reduction ?
I didn't see you Boiling Shallot and chervil wie vinegar down into an essence ... what you made there is not an hollandaise, though i must admit it makes the process easier

You can use this technique for béarnaise sauce too. Makes it way easier to make in a time crunch

Left out alotbof crucial elements of the hollandaise sauce such as the white wine vinegar and the taragon. But still good!
