Maybe just use the cookie part from the sandwich and use something else as the “ice cream”. Something that won’t melt/ inedible something that will hold its shape in place of the ice cream.

It's good to make the biscuit molds separately anyway, since you can only get one textured surface doing it together.

So just out if curiosity I took a look in Etsy & they have fake ice cream sandwiches starting at $2, there are some that are $4 that are displayed on a plate & look like the normal size of an ice cream bar & of course you can talk to sellers to find out size & material but they look awesome, even have nice realistic texture in the ice cream part. I know going the real food route is usually the least expensive & most accurate but this might be one of those times when going the fake route could be helpful. Bonus perk if it ends up being what you need & working well you forever have something to make the molds where foods get discontinued all the time so if a mold gets damaged or worn out you'd always have what you need to make another one. I'm sorry if it seems I'm trying to push you I promise I'm not, just trying to be helpful

Are you kidding me, they used to make a salted caramel flavor which is my all-time favorite so I'd go through a box a week of these little ice cream sandwiches & one of the things I loved the most about them is how fast they went from rock solid to soft serve. I grabbed a box of the just plain vanilla recently, because it's hot AF. I've tried all the flavors & they used to be surprisingly good especially for such inexpensive ice cream but something has changed & they are definitely not the same but still not horrible

id say use clay or smth to make a flat imprint of one of the tops of those, then you have a mould of the cookie, then you can find something to fill the center

Why don't you use a light layer of glue/modpodge on the outside of one of those green blocks (after sculpting out your wanted design of course by simply using likee a butter knife or super fancy tools from an store or ones you can buy online that are again super fancy) idk what the green blocks are called but they are like pinetree or grass colored blocks and they have very super tiny concrete like 'holes' that would come into conflict with, from the look of it, ur gel molding stuff which is why i advise(d) the modpodge/glue or whatever hardening cohesive you learn/find best to use but yeah hope you try it and prwy it brings you many more easier molding techniques
