I understand your point man and I agree but the reality is that most people who say these questions are broke and NEED a job so the mindset is probably get a job first secure my life then expand and maybe become a better engineer etc

But the problem is: "resume-driven development" is what recruiters want. Show me your x years of experience with x. Even if you know React, they will reject you because they specifically want Vue.js. They don't care if you're can adapt to it in a matter of weeks. They look at two papers: what the company wants, and your resume, if the words are the same (e.g. want React, have React), you're good to go.

I appreciate the advice but I can’t eat something bigger. I feel like people who already have a job can shoot for something bigger. People, who are asking what skill I should develop to find a job, just need money to survive.

Between success and failure the latter is the better teacher. So choose an ambitious, challenging project that gets you out of your comfort zone and you might fail to complete. Even if you "fail" to reach your ultimate goal you've likely succeeded in others.

I've been working on increasing the size and diversity of my "toolbox", learning language agnostic best practice as close to the source material for the relevant practice as possible.

The trick after this step is being pragmatic with applying them :)

I work as a data scientist so most of my code is python and R, that said my current side project is writing a plugin in TS for Zotero to implement a feature I wanted back when I used it but won't any more, I do it because it's personally fulfilling to see it get done, and because I have zero experience in web dev related stuff so it's a great opportunity to learn

Just don't do a "side project". Go outside, do stuffs you love, whatever it is, and live for something else than your job. Find what you love in life then code for it.
Believe me, if you don't do that, sooner than later, you will be bored or disappointed with your work.
