Dry age idea: marinate a boneless prime ribeyes in gin for 24 hours and then cover it in your house smoked beef tallow and some rosemary. The gin and rosemary really complement eachother plus the tallow will reduce the pellicle size

Why alter a perfect piece of meat. It is perfect just plain, just salt and pepper sparingly is needed.

This is not a hate comment. It is just amazing how nowadays everything is Wagyu. It sure seems like it is a loosely tossed-around name. The Wa means Japanese and gyu means cow. So this must be like American Wagyu tossed around like crazy because of a bunch of crossed-bred low-grade Japanese cows from when it was legal to transport live cattle to the states. Now Only a few true Japanese cows are being bred with Angus 50/50 in America to make high-grade American Wagyu because they cut the transportation of live cattle so long ago.

All Wagyu needs is a little bit of salt and pepper. To me this is complete overkill and ruins the cut of meat
