A question we get a lot is how we use goose eggs on the farm. Geese don’t lay nearly as many eggs as chickens or ducks, and the eggs are a lot heavier in texture than chicken eggs. For this reason, we don’t really like them fried or scrambled, but do enjoy using them for baking and puddings. #homestead #chicken #geese #goose #eggs

For those who don’t know. Chickens only lay eggs all year round because they were bred( by humans) to develop that capability. Also, Only eggs that have been fertilized by a rooster can hatch baby chicks.

Duck eggs too. Equal to two chicken eggs. They are give the baked item a fluffy and smooth texture. I love duck and geese eggs

For a little side cash, first study up on carving eggshell. Then learn how to (no rude jokes please and thank you) blow an egg. Had an aquantice that did beautiful work. She paid for her shells being an apartment dweller. This was in the 90's, paid 10 dollars a piece for goose eggshells and well over 100 for an imported ostrich shell. When I was a kid, my mom would do replacements for her Easter egg tree. We had chickens, had to buy goose eggs. And yes, looked forward to the best cakes of the year. Duck eggs are good baking eggs as well.

Intimidating geese ...had a meat share for a farm & the farmers family had 3 pairs of geese.
Every time I went to the farm to pick up my food items, the geese were out in the driveway where the food pick up was located. They would be aggressive, making noise, spread & flap wings, the alpha male goose would often strike his beak at my tires.
It didn't matter which vehicle that I drove to the farm, that was my experience every time. I'd say that in a year, I might have shown up to the farm in about 5 different vehicles, so it's not like the geese recognized the car. They would start aggressive behavior before I got to the pick up location & kept it up, until I was driving away.
It got to be that I would hurry, so not to be in their physical vicinity.
Because of their aggression, when the farmers wife asked if I'd be interested in a couple of goose eggs, I said, 'yes, thank you '!!! Nice sunny side up. 😋

Yeah i tried to make a custard out of goose eggs because the yolks are so big and creamy but they taste wayyyy more gamey then chicken eggs…
