I wonder how the wings would turn out using wasabi root instead of the tubed stuff? Actual wasabi isn't actually spicy, so maybe it would add more of a sweet element to the wings.

Andrew please don't forget the salt and anaerobic conditions for fermenting. That looked like straight ground peppers and is more likely to grow mold than ferment.

Those look PHENOMENAL! One question, though: were there serrano peppers included on the green pepper sheet tray that I just didn't notice? I'd imagine their flavor profile would complement the wasabi quite well. (I'd also be interested to see how *fresh* serrano peppers included into the mash along with the other roasted peppers might work. Definitely going to be trying this...)

I find it interesting how different countries have different cuts of meat, even for the same produce. Here in Brazil I've seen, countless times, the wing and wing-tip served and fried together. I've eaten the skin between the joints as well as the wing-tips countless times
