reason why we use day old rice is because it's dry and separates well so all those flavor will soak and coat nicely. Fresh rice is watery and cooking fried rice using electric or medium fire will make the rice clumpy and mushy. This is why he's cooking it over high heat to dry up the excess water quickly but not burning it. The timing needs to be perfect. So if you're the average people cooking for your own, don't try this. Better start with overnight rice first. if you don't like to do that, spread those freshly cook rice over a flat surface then put in the fridge where it will absorbed the moist quickly. Wait till it feels dry then off you make your fried rice in a normal stove.
