This is the pina colada recipe in ATK's How to Cocktail (highly recommend), I've made it a few times. Very tasty and strong, not too sweet. I use 4 oz rum instead of 6 oz.

You need to add an 8th tsp of xanthan gum and that completely prevents it from melting/separating in the first 5 minutes.

Thank you for this simple recipe. Very often with fewer ingredients, the better the outcome. I use a Thai brand of coconut cream called Mae Ploy. It's creamy & has good coconut taste.

The Piña Colada was invented in Puerto Rico. The traditional recipe uses cream of coconut and our favorite brand is Coco Lopez. It also uses Puerto Rican rum. Don Q and Ron Barrilito are best, but you can use any Caribbean rum in a pinch.

Would canned pineapple syrup/juice add sweetness and more flavor instead of a simple syrup? Or would it mask coconut flavor?

I do mine with Myers Rum instead of white.

When my brother was young, I made him a Virgin Pina Colada and he loved it. From then on, he would ask me to make him one all the time. When he grew up, I forgot to ask him if he preferred the alcoholic Pina Colada.

The West Indian pirate from puerto Rico Roberto Cofresí in & around 1825 used dark Rum pineapples coconut water limes & bananas this recipe was lost I'm old & well traveled enough to remember & recall the drink was thick & nourishing shaken not stirred
