Buy a full wheel! It ripens over 6-9 months.

I love Appenzeller cheese, but here in the US it is getting too expensive.  Prices here are ~$24 per pound.  I don't understand why it is so expensive, when we can buy imported Norwegian Jarlsberg for less than $5 per pound.
