💥 Vada Pav Original Recipe💯
✨ Ingredient for chilli garlic paste :
Garlic 3-4 cloves
Ginger a small piece
Green chillies 4-5 nos. (adjust spiciness
✅Method for Chiili paste :
Add all the ingredients in a grinding jar and grind to make a paste. Keep aside to be used later while making the aloo mixture.
✨ Ingredient For aloo mixture :
Oil 1 tbsp
Rai (mustard seeds) ¼ tsp
Jeera (cumin seeds) ½ tsp
Hing (asafoetida) ¼ tsp
Kadi patta (curry leaves) 8-10 nos.
Kharda (chiili paste)
Turmeric powder ¼ tsp
Salt to taste
Potatoes 3-4 medium size (boiled &
mashed)
Fresh coriander a handful (chopped)
✅ Method for aloo mixture :
Heat a pan, add oil, mustard seeds, zeera , asafoetida, curry leaves,chilli paste, and turmeric powder , saute for a minute.
Take boiled and mash potatoes add prepare chilli mixture, salt, coriander leaves and mix well. Aloo mixture is ready.
Let's shape the vadas, take a spoonful of aloo mixture and roughly shape in ball with hands, shape all the vadas in same way.
✨For batter:
Besan 1 cups
Salt to taste
Turmeric powder ¼ tsp
Baking soda a pinch
Water as required
✅ Method :
In a mixing bowl, add the besan & other ingredients of the batter and mix well, add water gradually to make a smooth batter make sure there should not be any lumps. Use a whisk to whisk the batter nicely,
whisk for at least 4-5 minutes, makes sure the consistency of the batter should not be too thick or too thin, it should be in flowy consistency.
Set oil on medium heat for deep frying,
Coat the vadas with besan batter and slide the besan coated vada balls in hot oil for deep frying.
fry them till golden brown.
✨Serve with fried chilli and peanut chutney or green chutney.
