When the light is behind the background and peeking out a bit, the reflector becomes the light source that illuminates the subject. So you stand at the subject and aim the exposure meter at the reflector. The light from behind hits the reflector, then the light from the reflector bounces off and illuminates the subject.

Brillant technique, but take note! This technique won't work well when your subject as light hair.
