I visited Ambassador’s Sky Chef at Delhi which is India’s oldest flight kitchen that caters to Air India and many other airlines. The unique Indian kitchen setup cooking North and South Indian flavor dishes, samosa, curry, snacks, and sweets. Many thousands of meals were made from this mega airline kitchen.

Next, the kitchen presents some new dishes from Air India onboard catering. Chef explains the upcoming food and beverage on Air India which is very different from other airlines.

I’ve always liked the food on Air India. It’s full flavour. It was a nice surprise to get naan or roti with your meal too. I’m looking forward to trying this new menu one day!

It is incredible for airlines to preserve Indian traditional cooking methods in catering. Rating agencies underestimated this

By allowing an aviation legend like Sam Chui into the Air India Operations, I think Air India has got a great a PR machine going. Respect to you Sam, we avgeeks live vicariously thru you.

This really makes you appreciate how much work and dedication goes into making airline food. I'm sure most other catering companies use machines, but Indians take pride in making their food by hand and making sure it's the highest quality.

Every airline that allows itself to be looked into has nothing to hide. Impressively tasty.

You can already see they are starting to take this makeover seriously. The presentation and meals are looking better, and the new menu is looking good.

Very impressive. I have been hoping that since air India was taken over by TATA That the overall product would improve and I do believe it’s coming. It’s a long way to go but looking at what they’re doing now with food is certainly a huge step in the right direction.

Air India had first started their very own kitchen called 'Chefair' under a subsidiary company which also owned and managed Centaur Hotel in Santacruz. Food prepared by them was way better than any flight kitchens which came later. Unfortunately they closed down and opted to resource from Flight kitchens.

I love how Air India has started to overhaul the company and it's image. The redesign of the website and Sam collaborating with Air India shows that the airline is serious. I wish it all the success in the world!

Great to see Sam taking interest in the airline beyond bed, bath and linen. Air India has lot riding for it and if Sam's inputs can help then its not a bad idea.

It was funny when Sam commented “fresh” when eating the bread straight from the oven and that too standing next to the oven. It was like calling a fish “fresh” sitting in the fishing boat.

The food looks delicious and colourful as the drink menu, I hope western factories across the world take note to start producing new enchanting flavours for the future frequent flyers.
