This Strawberry Swiss Roll is a perfect light and soft cake for warm spring or summer day to share with family & friends.

LINKS

Fan Oven 180 c or 350 f
Time 12- 15 mins

Filling
10oz or 300g strawberries
1/4 cup or 50g sugar
1 tbsp or 15ml water

- bring to boil then simmer for 15/20 mins and let cool

Cream
- 400ml whipped cream with 1 tbsp vanilla

Cake
3/4 cup or 95g flour
1tsp or 4g baking powder
1/2 tsp or 2g salt
4 eggs
3/4 cup or 150g sugar
1 tsp or 5g vanilla extract
2 tbsp or 28g vegetable oil

Icing Sugar for dusting

- mix flour, baking power & salt in a bowl
- mix eggs, sugar & vanilla until lemon yellow and foamy
- sieve in flour mixture
- add oil until well incorporated
- bake for 12 - 15 min's
- using a clean towel dust with icing sugar
- while hot turn out cake on to towel and roll
- let cool for 45 mins
- when cool unroll and add filling
- roll again and refrigerate for one hour
- ready to serve
