Thai curry Dumpling soup #soupseason

It's incredible how easily it came together and how good it was!
Ingredients (serves 2):
1 tbsp ginger & garlic, chopped
1-2 cups mixed vegetables (bell peppers, mushrooms, onions), sliced
1-2 tbsp Thai red curry paste (adjust to taste)
1/3 can (100 ml) coconut milk
1 tbsp soy sauce
1-2 handfuls spinach
100gm paneer/tofu
1 pack frozen dumplings
Fresh lime juice (from 1/2 lime)
Sliced green onions, for garnish
Chilli oil, for garnish
Instructions:
Heat oil, sauté 1 tbsp ginger & garlic, then add sliced veggies and cook until soft.
Stir in Thai red curry paste, cook for 1-2 minutes.
Add 100 ml coconut milk and soy sauce. Simmer for 2-3 minutes
Add frozen dumplings, spinach and paneer/tofu. Cook until dumplings are heated through.
Squeeze in lime juice
Serve hot, garnished with green onions and chili oil. Enjoy!
